Cooking on road: hearty beef stew campfire recipe

Figuring out what to cook is hard enough when you’re at home, let alone out on the road. After an adventurous day of exploring sometimes all you want is something simple, yet hearty and healthy - and that go-to can of baked beans just doesn’t cut it.
Whether you're cooking over a campfire or using your van's kitchen, this recipe is perfect for cooking on the road. So grab a spoon and huddle around the campfire, we've got some cooking to do!
Recipe: Hearty Beef Stew

Makes: 4 servings Prep Time: 15 minutes Cook Time: 2hrs 30 minutes
Equipment:
A large pot or dutch oven
Wooden spoon
Small-medium sized mixing bowl
Sharp knife
Chopping board
Ingredients:
500g beef stewing meat, trimmed and cut into inch cubes
¼ cup all-purpose flour
¼ teaspoon freshly ground pepper
2 tablespoons of vegetable oil
1 cup red wine
1L of beef stock
2 bay leaves
1 medium onion, peeled and diced
5 medium carrots, peeled and cut into 1cm rounds
2 large baking potatoes, peeled and cut into 2cm cubes
2 teaspoons salt
Steps:
Combine the flour and pepper in a bowl, then add the beef and toss to coat well. Heat 1 tablespoon of oil in a large pot (or dutch oven). In small batches add the beef to the saucepan to brown. Cook, turning the pieces until beef is browned on all sides, about 5 minutes per batch; add more oil as needed between batches.
Add the wine, beef broth and bay leaves to the saucepan and bring to a boil. Once boiling, reduce to a slow simmer and continue to cook for 1 1/2 hours, until the beef is tender.
Add the onions and carrots and simmer, covered, for 10 minutes. Add the potatoes and simmer until vegetables are tender, about 30 minutes more.
Season with salt and pepper to taste. Ladle among 4 bowls and enjoy!
